PRODUCT DESCRIPTION
Hillrock Estate Distillery holds a genuine industry-first distinction: the first company to offer solera-aged bourbon in America, a technique traditionally reserved for crafting exceptional Sherries, Ports, Madeiras, and Cognacs, brought into whiskey production by the late Master Distiller Dave Pickerell, formerly of Maker's Mark. The solera system itself is worth understanding — a pyramid of barrels where a portion of whiskey is periodically transferred from the lower casks, while new whiskey is added to the top, ensuring no barrel is ever fully emptied and older and younger whiskeys gradually blend together over time, building genuine depth and complexity.
This particular expression takes that solera-aged bourbon foundation and gives it a final finishing stage in Tawny Port casks — wine barrels that spend years oxidizing in wood, developing a genuinely nutty, dried-fruit character distinct from the brighter, fruitier profile of ruby port. Hillrock has used this exact cask type before as part of its celebrated Cathy's Cuvée series, curated by co-founder Cathy Franklin, where the Tawny Port component was described as contributing "red berry and chocolate" alongside the blend's Sauternes and Pedro Ximénez finishes. This standalone Port Cask Finish gives that same Tawny Port character room to define the whiskey entirely on its own, rather than sharing the stage with other cask influences.
We don't have independently published tasting notes specific to this standalone bottling, so rather than borrow flavor descriptors from a different Hillrock release, we'll let this particular expression speak for itself once it's open. For genuine context, Hillrock's broader Solera bourbon has earned real, consistent praise across independent reviewers: WhiskeyFellow's review awarded it a "Bottle" rating, calling it "one of the best non-allocated, on-the-shelf Bourbons I've had this year," while Breaking Bourbon's tasting found "sweet dark fruits taking the forefront... cherries, candied raisins, and a bit of something else sweet, dried apricots maybe," underscored by "vanilla, caramel, rye spice, burnt brown sugar" and "a bit of an herbal/floral quality." Hillrock remains one of the few genuine field-to-glass whiskey producers anywhere in the world, growing its own grain on-site — a real point of pedigree behind any Hillrock expression, this Port Cask Finish included.
Hillrock Solera Aged Bourbon Whiskey, Port Cask Finish, is produced by Hillrock Estate Distillery, a farm distillery with roots dating to 1806, located in Ancram, in New York's Hudson Valley, roughly two hours north of New York City. Founded by Jeffrey Baker and his wife, Cathy Franklin, in collaboration with the late Master Distiller Dave Pickerell, formerly of Maker's Mark, Hillrock was the first company to offer solera-aged bourbon in America. Hillrock is one of the few genuine field-to-glass whiskey producers in the world, growing its own grain estate-side, distilled from a mash bill of 63% corn and 37% rye in a copper pot still.
The whiskey is aged using the traditional solera method before undergoing a final finishing stage in Tawny Port casks — wine barrels aged longer in wood than ruby port, developing an oxidative, nutty, dried-fruit character. Bottled at 46.3% ABV / 92.6 proof, 750ml.
No independently published tasting notes are confirmed specifically for this standalone Port Cask Finish bottling at this time. For context, Hillrock's Tawny Port cask component has appeared as part of the brand's Cathy's Cuvée blend, and the base Solera bourbon has received extensive independent praise:
Whiskey Consensus (Cathy's Cuvée #8, Tawny Port component context):
"Notes of... red berry and chocolate from the Tawny Port cask... highlight this remarkable whiskey."
WhiskeyFellow (base Solera bourbon, house-style context):
"I loved every aspect of this whiskey, from the nose to the finish. There isn't a single negative thing I can point out... This snags my coveted Bottle rating and, in fact, might be one of the best non-allocated, on-the-shelf Bourbons I've had this year."
Breaking Bourbon (base Solera bourbon, house-style context):
"The influence of the Oloroso Sherry casks is quite evident, with notes of sweet dark fruits taking the forefront. Most prominent are cherries, candied raisins, and a bit of something else sweet, dried apricots maybe. Underneath I notice more typical bourbon flavors — vanilla, caramel, rye spice, burnt brown sugar, and just a tiny bit of seasoned oak. It has a bit of an herbal/floral quality to it as well."
Specific tasting notes for this standalone Port Cask Finish are not yet independently published. Based on Hillrock's confirmed Tawny Port cask character and base Solera bourbon profile:
Nose
Expect caramelized dried fruit, walnut, and oak layered over classic bourbon vanilla and caramel, with red berry and chocolate notes reflecting the Tawny Port cask's oxidative character.
Palate
Rich and full-bodied, with dark, dried fruit sweetness meeting traditional bourbon spice — rye, brown sugar, and toasted oak — balanced by the Port cask's nutty, wine-driven depth.
Finish
Long and warming, closing with lingering dried fruit, chocolate, and spice.
