Hillrock Estate Distillery holds a genuine industry-first distinction: the first company to offer solera-aged bourbon in America, a technique traditionally reserved for crafting exceptional Sherries, Ports, Madeiras, and Cognacs, brought into whiskey production by the late Master Distiller Dave Pickerell, formerly of Maker's Mark. The solera system itself is worth understanding — a pyramid of barrels where a portion of whiskey is periodically transferred from the lower casks, while new whiskey is added to the top, ensuring no barrel is ever fully emptied. Older and younger whiskeys blend together gradually over time, building a depth and complexity genuinely difficult to replicate through conventional aging.
This particular expression takes that solera-aged bourbon and gives it a final finishing stage in 20-year-old Pedro Ximénez sherry casks — some of the most intensely sweet, syrupy dessert wine casks used anywhere in spirits production. The result, per The Barrel Tap's own description, infuses the whiskey "with unique layers of floral notes, fig, roasted walnuts, candied fruit, and spicy rye." Hillrock's PX-finished bourbon also plays a starring role in the distillery's celebrated Cathy's Cuvée series, curated by co-founder Cathy Franklin, where it's blended alongside Sauternes and Tawny Port finishes — that combined release found "maple and toffee from the PX" component highlighting the whiskey alongside "honey and caramel from the Sauternes cask" and "red berry and chocolate from the Tawny Port cask." Hillrock Solera Aged Bourbon Whiskey, PX Cask Finish, is produced by Hillrock Estate Distillery, a farm distillery with roots dating to 1806, located in Ancram, in New York's Hudson Valley, roughly two hours north of New York City.
