John Philip Wiser emigrated from New York to Ontario in the 19th century and, in 1857, purchased a distillery in Prescott from his own grandparents — the beginning of what would become one of Canada's most historically significant whisky operations. By the early 1900s, Wiser's had grown into the third-largest distiller in the country. When he introduced his whisky to the world at the 1893 Chicago World's Fair, he may well have been the first person to ever use the term "Canadian Whisky" on a label — a small footnote in whisky history that speaks directly to how much of the category's identity Wiser himself helped shape.

The distillery has changed hands more than once since his death in 1917 — merged with H. Corby Distillery, production shifted to Corbyville in 1932, then absorbed into Hiram Walker & Sons in Windsor, Ontario, when Corby's own distillery closed in 1989. Today J.P. Wiser's sits under the Pernod Ricard umbrella, but the brand's whisky-making philosophy — and, remarkably, its actual production methods — remain rooted in the standards Wiser set more than a century and a half ago. The 18 Year Old is crafted by Don Livermore, Wiser's Master Blender, who spent fifteen years as a working blender before completing his Ph.D., built entirely from double column-distilled corn whisky matured in Canadian oak barrels for a minimum of eighteen full years — no younger whisky anywhere in the blend, a genuine rarity in a category where much of the competition bottles considerably younger.

The Beverage Tasting Institute awarded a Gold Medal and 93 Points in 2016. Independent reviewer Chip Dykstra of The Rum Howler Blog described it as more robust than Wiser's own 15 Year Old, with the oak showing more firmly, calling both expressions genuinely hard to go wrong with. The Whisky Knights went further still, including this bottle in blind tastings alongside bourbons and Scotch whiskies with considerably more pedigree on paper — and reported that J.P. Wiser's 18 Year Old beat them all. Master of Malt's own community called it "heaps of complexity, and fruity notes... what a steal at this price." Caskers found notes of mature oak, autumn florals, spice, rich caramel, and a specifically Southern Ontario green apple character that reviewers say is difficult to find in whisky of this age from anywhere else. This is Canadian whisky at its most patient and its most historically grounded — a full 18 years in the barrel, from the man who may have coined the category's very name.


Origins & Craftsmanship

J.P. Wiser's traces its history to 1857, when John Philip Wiser — an American who had emigrated to Ontario and worked at his grandparents' distillery in Prescott — became the distillery's manager and, within five years, purchased it outright. Under his direction the operation grew into one of the largest and most prestigious distilleries in Canada, and by the time he introduced his whisky at the 1893 Chicago World's Fair, Wiser had established the brand as a byword for quality Canadian production. Following his death in 1917, the company merged with H. Corby Distillery; production moved to the Corby distillery in Corbyville, Ontario, in 1932. Hiram Walker later acquired a controlling interest in Corby, and when the Corbyville facility closed in 1989, all Wiser's production consolidated at the Hiram Walker & Sons distillery in Windsor, Ontario, where it continues today under the Pernod Ricard portfolio.

The 18 Year Old is a blended Canadian whisky made almost exclusively from corn, double distilled on column stills — a mash bill notably free of rye, distinguishing it from many of its Canadian whisky peers. The whisky is aged a minimum of 18 years in Canadian oak barrels; every component in the blend meets that full age threshold, with none younger permitted regardless of blend composition. Master Blender Don Livermore, who holds a Ph.D. and spent fifteen years working as a blender before completing his doctorate, oversees the final assembly. Bottled at 40% ABV / 80 proof, typically chill-filtered for clarity.

"Nose: Aromas of red apples and plenty of oak. Palate: A fresh fruit arrival of red apples and caramel that transitions nicely into spices and oak, which starts building from the mid-palate onwards. At a minimum strength of 40% ABV, the oaky flavor is not overwhelming but brings personality and complexity to the whisky. Finish: Short with tobacco, oak, and spices. Aficionados of bourbon will not have any issues handling this one. I have included this Canadian Blend in two private tastings along with bourbons and Scotch whiskies with more pedigree on paper, only to conclude that J.P. Wiser's 18 Year Old beat them all at the end of the tasting."

Tasting Profile

Nose
Rich vanilla and dried fruits lead, joined by toasted oak and a hint of spice. Red apples and plenty of oak arrive together, with spicy oak tones dominating on first approach — cinnamon, nutmeg, a little allspice, and a hint of clove building underneath. Sweet, brown sugar notes provide a warm foundation throughout.

Palate
Smooth and layered, with a fresh fruit arrival of red apples and caramel transitioning into spices and oak that build steadily from the mid-palate onward. Toffee, caramel, and subtle spice unfold in gentle layers, balanced with a hint of toasted grain. Brown sugar, vanilla, honey, fruit, and syrup carry real sweetness without becoming cloying, the 18 years of Canadian oak contributing genuine personality and complexity without overwhelming the whisky's essential smoothness.

Finish
Long and warming, with tobacco, oak, and spice carrying the close. Vanilla and licorice linger, leaving behind a soft warmth and lingering sweetness that invites another sip. A finish built for slow evenings rather than quick pours.
