Bryan Do was a Microsoft executive. His father told him he should focus on his own dreams rather than make someone else rich. He left, joined South Korea's craft beer boom, sold the brewery, and turned to whisky — founding what is now Ki One Distillery in 2020 in Namyangju, a region about 40 minutes northeast of Seoul where the four seasons arrive with the full force of the Korean peninsula: summers hot and humid enough to accelerate spirit maturation at rates that Scotland and Kentucky cannot approach, winters cold enough to drive the spirit deep into the wood in a way that compressed decades of slow-maturation climate produce in years.

Ki One — in Korean, the beginning and hope — is South Korea's first craft single malt whisky distillery, and in the five years since its founding it has accumulated an extraordinary list of international credentials. The Unicorn Edition won the Worldwide Whisky Trophy at the 2025 IWSC — the first Korean whisky ever to achieve this distinction. The Batch 3 Oloroso Sherry Cask won Double Gold at the 2024 San Francisco World Spirits Competition and was named Best Korean Single Malt at the 2024 World Whiskies Awards. The Tiger Edition won Gold at the 2025 San Francisco World Spirits Competition. Korea's most popular Ki One expression now exists in both its 46% standard form and this annual limited release — the Tiger Edition Cask Strength 2025, bottled once a year, undiluted directly from the cask.

The standard Tiger Edition takes the distillery's most celebrated style — sherry and wine cask maturation, 100% unpeated malted barley, non-chill filtered, no added coloring — and presents it at 46% for immediate accessibility. The Cask Strength 2025 takes the same philosophy and pushes it further: matured exclusively in sherry and red wine casks for no less than four years — a full year longer than the standard Tiger — then bottled without dilution, without compromise, at whatever strength the cask delivers. The distillery's own description: "a whisky full of concentrated dried fruit, honey, and butterscotch that is balanced by Ki One's signature Korean spice. The finish lingers with dark chocolate, raisin, and syrupy red fruit, making this the perfect cold weather dram."

This is the most powerful, the most concentrated, and the most specifically individual annual expression of what Ki One's most celebrated style can produce. The tiger — the national animal of South Korea, representing its people and its land — has never been more fully realized than in this bottle.


Origins & Craftsmanship

Ki One Distillery — formerly Three Societies, reflecting its founding trio of Korean, American, and Scottish nationalities — was established in 2020 in Namyangju, in the Gyeonggi Province of South Korea, approximately 40 minutes northeast of Seoul. Bryan Do, the Korean-American founder, partnered with Andrew Shand — a Scottish master distiller with experience at The Glenlivet, Nikka, and Speyside Distillery — to build what was, at its founding, the first craft single malt whisky distillery in Korean history. The distillery uses two copper pot stills supplied by Forsyths of Rothes — the same Speyside cooperage that has built stills for virtually every serious Scotch whisky distillery for over a century. Fermentation runs a minimum of five days in stainless steel tanks, producing a wash of considerable character before double distillation.

The most significant and the most specifically unusual production advantage Ki One holds over every European and American whisky producer is geography: Namyangju experiences Korea's full four-season climate, with hot, humid summers and genuinely icy winters. This temperature cycling — the cask expanding as the spirit absorbs warmth in summer, contracting and pushing the spirit back through the wood in winter — accelerates maturation at a rate the distillery estimates at 2.5 times the speed of Scotland. The practical result is that a Ki One whisky matured for four years achieves a level of wood interaction and aromatic complexity that would typically require significantly more time in a temperate climate.

The Tiger Edition Cask Strength 2025 is the annual cask-strength iteration of Ki One's most celebrated and most internationally award-winning expression. Where the standard Tiger Edition draws on sherry and wine casks for a minimum of three years, the Cask Strength 2025 specifies exclusive maturation in sherry and red wine casks for no less than four years — a more specifically committed and more extended wine-cask program — then is bottled directly from the cask without dilution, without chill filtration, and without added coloring. Released once a year in limited quantities, each annual release carries its own specific cask-strength ABV. Produced from 100% unpeated malted barley.

Nose
Rich, concentrated, and immediately expressive — the four-plus years in sherry and red wine casks producing an aromatic density considerably beyond the standard Tiger Edition's three-year profile. Concentrated dried fruit leads — dates, raisins, and figs at their most intense, the sherry cask's defining aromatic contribution amplified by the undiluted cask strength. Honey adds sweet warmth. Butterscotch adds the most specifically and the most characteristically ki One creamy-sweet secondary note. Ripe mango, grilled persimmon, and red fruit add the most specifically Korean and the most tropically exotic tertiary aromatics. Toasted cinnamon and Korean spice add the warm, characteristically peninsula-spiced quality that distinguishes Ki One from Scotch and Japanese single malts of similar cask profiles. A subtle honey-soy note — the most specifically unusual and the most memorably Korean aromatic quality in the entire range — adds complexity with air.

Palate
Round, luscious, and generously confectionary — the four-year sherry and red wine cask program's most direct palate contribution in a sweetness that is concentrated but never cloying. Peach cobbler, crème brûlée, and clove-studded orange peel add the most generous and the most layered confectionary palate character. Butterscotch and caramel from the wine casks build through the mid-palate alongside raisin, nutmeg, and apple. Dark chocolate adds depth and bitterness that provides genuine structural counterweight to the sweetness. Ki One's signature Korean spice carries throughout — the warm, slightly spiced character that both the climate and the philosophy of the distillery deliberately impart.

Finish
Long, warming, and syrupy — the perfect cold weather dram, as the distillery specifically describes it. Dark chocolate, raisin, and syrupy red fruit persist through a lengthy, warming close. The Korean spice lingers alongside brioche and a hint of applewood mustiness — the most specifically and the most elegantly Korean finishing quality, the note that multiple reviewers compared most favorably to the refined closing character of Yamazaki.
