Most whiskies finish in Cognac casks for a few months. Kilchoman did something different: this whisky spent its entire maturation in ex-Cognac barriques, so the French oak and the Cognac character had time to fully develop. The 2026 edition is a vatting of 33 first-fill ex-Cognac barriques of spirit distilled in 2019, bottled at 50% ABV. It’s part of Kilchoman’s “Not A Finish” series, which explores full-term maturation in experimental casks, and it follows the Maury Cask Matured expression. The first Kilchoman Cognac Cask Matured was released in 2023, from casks sourced from Tonellerie Bossuet in France.
Kilchoman is Islay’s farm distillery, founded in 2005 at Rockside Farm on the northwest coast of the island. It is one of the few distilleries in Scotland that manages the entire process, growing barley, malting, distilling, maturing, and bottling, all on its own land. That farm-distillery character, with its clean peat smoke, citrus, and coastal edge, meets the “wine-like sweetness” of Cognac casks here. The distillery describes the result as a whisky that “marries toasted nuts, warming spices and stone fruit with Kilchoman’s peat smoke and citrus character,” “bright and vibrant,” balancing “ripe pear and apple with crystallized ginger, baking spices and coastal peat smoke.”
The official notes describe a nose of “ripe pears and apples, with peat smoke, honey sweetness, toasted nuts and baking spices,” a palate with “a buttery mouthfeel, with waves of baked fruit, honeycomb and salty sweetness,” and a finish of “drying smoke with a lasting sweetness and mellow fruit notes.” The 2026 is new, with no independent reviews yet, but the 2023 edition gives context: Whisky Saga scored it 87/100, finding “bold and meaty” notes of “smoked bacon” and orchard fruit, with “sweet, almost sugary, yet still earthy” flavors and a “robust, smoky delight — classic Kilchoman.” The Whiskybase community rates the 2023 at 85.56/100 across 231 ratings. It’s a rich, fruity, smoky Islay malt, a good fit for peat fans who want something a little sweeter and more elegant, and an unusual cask style that sets it apart on the shelf.
