PRODUCT DESCRIPTION
Kilchoman is Islay’s farm distillery: founded in 2005 by Anthony Wills and his wife Kathy from a collection of derelict farm buildings at Rockside Farm on the island’s west coast, near Machir Bay, the first new distillery built on Islay in more than 124 years. It remains independent and family-run, and every bottle is “distilled, matured and bottled by Kilchoman Distillery” on the island, without chill filtration or added colour, at its signature 50% ABV.
The Goat is a limited edition created to mark the Lunar New Year 2027, the Year of the Goat. The whisky is matured exclusively in Pedro Ximénez sherry casks. PX is the darkest and sweetest style of sherry, made from sun-dried grapes, and a full-term maturation in PX casks, rather than a short finish, is a bold choice for a peated Islay malt. Kilchoman describes the result as “bold and indulgent, crafted as a tribute to renewal, prosperity, and the spirit of celebration.”
The supplier’s tasting description: “Full-term maturation in PX casks brings forward powerful notes of figs, raisins, burnt caramel and smoked licorice, layered with Kilchoman’s signature character.” That signature character is farm-crafted Islay spirit, with citrus sweetness and coastal peat smoke, here wrapped in the dark-fruit richness of the sherry. It’s bottled at 50% ABV (100 proof), 700ml, and the color, a deep burgundy-mahogany, reflects the PX influence.
The packaging is made for the occasion: a deep red gift box with a gold goat’s head and sweeping horns over a stylized map of Islay, and a bottle that carries the signatures of founder Anthony Wills and Robin Bignal. No independent reviews have been published yet.
It’s an easy gift for Lunar New Year and a collectible for Kilchoman and sherried Islay fans, and a rich, dessert-leaning smoky malt for customers who like their peat with dark fruit and burnt sugar. Enjoy it neat, or with a few drops of water, after dinner.
