Tobalá is genuinely one of the most prized and difficult-to-source agaves in all of mezcal — a very small wild variety that yields comparatively little agave per plant, meaning a large volume of piñas must be gathered just to produce a single batch. This particular expression carries the "Ancestral" designation, a genuine, specific production classification meaning no machines were used anywhere in the process — the cooked agave is mashed entirely by hand, and distillation takes place in traditional clay pot stills, known locally as "Barro de Olla," rather than the copper stills more commonly used elsewhere. It's produced by Maestro Israel Palestino Cruz in San Juan Bautista Jayacatlán, within Oaxaca's Valles Centrales region, using wild Tobalá harvested at 9 to 12 years of age.
The mezcal is double distilled in clay pots, with the final alcohol content carefully adjusted using "puntas y colas" — the heads and tails set aside during distillation — a genuinely traditional, hands-on technique for dialing in the finished proof. This is part of Koch's broader mission, founded in 2009 by Carlos Moreno and fifth-generation maestro mezcalero Pedro Hernandez, to preserve and promote authentic mezcal culture across a growing collective now spanning more than 15 communities and 50 producing families.
Independent tasters have found genuinely rich, layered character here. Prizefighter Bottle Shop's tasting describes "a smoky, earthy, and mineral driven Tobalá with some lovely agave fruit notes on the finish." LiquorGeeks' extended tasting notes describe the mezcal's "crystal-clear appearance," with "a captivating blend of earthy and herbal notes" opening the aroma, joined by "delicate hints of roasted agave, fresh green herbs, and a subtle smokiness," the palate showing "a harmonious dance of flavors" — "sweet, fruity notes of ripe agave alongside herbal undertones, with a whisper of smokiness," and "a delicate peppery spice" lingering on the finish, which the brand calls "long and contemplative." Folsom Wine & Spirits' tasting confirms "a complex nose with earthy aromas, wild herbs, and a hint of tropical fruits," developing into "a complex palate of rich earthiness, floral notes, and hints of sweet tropical fruits complemented by a smooth, smoky finish." This is genuinely rare, traditionally made mezcal — real, patient craft behind one of the category's most sought-after wild agave varieties.
Koch El Mezcal Ancestral Tobalá Jayacatlán is produced by Maestro Israel Palestino Cruz in San Juan Bautista Jayacatlán, in the Valles Centrales region of Oaxaca, Mexico, part of the Koch El Mezcal de Oaxaca collective, founded in 2009 by Carlos Moreno and fifth-generation maestro mezcalero Pedro Hernandez.
Made from 100% wild Tobalá agave, harvested at 9 to 12 years of age. Nose
