This limited-edition Israeli single‐malt from Milk & Honey’s Art & Craft series is an inventive and bold experiment: matured exclusively in craft doppelbock beer barrels, it offers a distinctive interplay of malt richness, sweet-beer character and elevated spirit strength, making it a standout for adventurous collectors and discerning sippers alike.
Produced by Milk & Honey Distillery in Tel Aviv, Israel, this is Edition No. 3 of the Art & Craft series. The whisky was distilled on 26 February 2019 and then matured for approximately three years in ex-doppelbock beer casks formerly used by the Ha’Aretz Brewery, a craft brewer near the Negev desert.
The process: bourbon barrels were initially used by the brewery to age a special doppelbock beer for several months, then the barrels were returned to Milk & Honey and the new-make whisky filled into them under Israel’s warm climate—accelerating maturation through climate influence.
Bottled at 58.3% ABV, the edition is highly limited.
One whisky review site praised the edition’s nose as “honey at first, followed by plenty of sticky caramel and toffee… later a note of ginger and plenty of white pepper.”
The maturation story and cask choice have been acknowledged as pushing creative boundaries for single malts outside traditional geographies.
Nose: A rich opening of sweet malt and honey, caramelised toffee, vanilla custard, and a subtle zesty citrus twist.
Palate: Creamy texture with crème-brûlée richness, hints of orange peel and dark chocolate, layered with a mild bitter malt note reminiscent of the doppelbock beer heritage, accompanied by warm ginger and white pepper spice.
Finish: Medium to long, finishing on coffee bean roast, toasted biscuit, malt echo and a gentle spiced warmth.
