PRODUCT DESCRIPTION
Before Whispering Angel became a cultural phenomenon. Before Provence rosé appeared on every wine list, every Instagram feed, and every Hamptons terrace. Before any of that — there was Château Minuty. The Matton-Farnet family purchased Château Minuty in 1936, replanted its vineyards with traditional local varieties, and by the 1960s had made its wines a fixture on the lists of the finest restaurants on the Côte d'Azur. When Saint-Tropez — a short drive from the estate — became the most glamorous destination on the Mediterranean, Minuty was already there.
Wine.com describes the family simply: "the global leader in Côtes de Provence rosé, and beyond that it can be argued is the most important estate in the history of Provence rosé." That is a large claim. It is also an accurate one. The Matton brothers launched a négociant arm in 1995 — the Minuty label — to apply their estate's quality philosophy and winemaking precision to a broader range of Côtes de Provence terroirs, producing the Prestige, the M, and the Rosé et Or as négociant expressions alongside the estate's Château Minuty, 281, and prestige cuvées. The Prestige is the entry point into the Minuty négociant range — and Millesima, with access to the full 2025 range, describes it specifically as "hand-harvested Cru Classé, a rosé of rare saline purity, crafted for the table."
Rare saline purity. The Minuty Prestige's most specifically and the most consistently confirmed quality across every source is the mineral and saline finish — the Côtes de Provence terroir's most distinctly Mediterranean quality, the quality that the official winemaking notes specifically preserve by refusing malolactic fermentation (to maintain tension and liveliness) and using only the purest free-run juice fractions. Melon, white flowers, white peach, herbs, and lavender on the nose. Rich and velvety palate with freshness. An airy lightness underlined by pleasant minerality. The mineral and saline finish that makes it, as the official Minuty site suggests, a perfect partner for oysters, seafood, sashimi, and the entire Provençal table.
Château Minuty was purchased in 1936 by Gabriel Farnet, whose grandchildren — the Matton brothers, Jean-Etienne and François — now run the estate alongside the fourth generation of the family. The property is situated on the Saint-Tropez peninsula in the eastern Var, among the most historically prestigious and the most specifically rosé-defining terroirs in the entire Côtes de Provence appellation. Its wines became fixtures on Côte d'Azur restaurant lists by the 1960s — decades before the global Provence rosé phenomenon — and the iconic bottle shape now used by producers across the appellation was originally designed by Monique Farnet, the Matton brothers' mother, in the 1960s. Château Minuty holds Cru Classé status — one of only 18 Cru Classé designations in the Côtes de Provence appellation, awarded in 1955 and maintained across every subsequent classification review.
The Minuty négociant label was added in 1995, applying the family's quality philosophy to a broader sourcing footprint across the Côtes de Provence appellation — complementing the estate wines with négociant cuvées that draw from "grapes from all the terroirs of Côtes de Provence, continental and maritime." The family is committed to High Environmental Value certification across their estate, farming without chemicals or pesticides in a preserved environment bordered by protected woodland.
The Prestige is produced by rigorous selection of grapes from the finest Côtes de Provence terroirs, including Cru Classé plots. After harvest, pressing allows a careful separation between free-run juices and pressed juices — retaining only the purest fractions in a juice separation practice borrowed directly from the finest white Burgundy production philosophy. Fermentation is conducted at low temperature in stainless steel tanks to preserve aromatic freshness. Malolactic fermentation is specifically not carried out — an intentional decision to preserve all the tension, liveliness, and the mineral-saline acidity that makes Minuty Prestige specifically food-versatile. Four months in stainless steel before bottling. 12.5% ABV.

Nose
Pale rose with luminous clarity — the free-run juice only approach and the low-temperature fermentation producing a color of exceptional delicacy and brightness. The nose opens with very intense aromas of melon and white flowers — the Rolle's aromatic white grape contribution most immediately apparent in the floral brightness and the honeyed melon depth. White peach follows with stone fruit warmth. Herbs and lavender add the most specifically Provençal and the most specifically garrigue-character secondary aromatics — the Côtes de Provence hillside herbage's distinctive dried herb and floral quality translated into the most delicate and the most ethereal aromatic dimension. The nose is simultaneously intensely aromatic and pale in color — the combination that defines the finest Provence rosé at its most specifically accomplished. A saline and mineral undercurrent threads through as the most specifically and the most enduringly Minuty-distinctive quality.
Palate
Rich and velvety with freshness — the most specifically paradoxical and the most accurately observed combination. The entry delivers the melon and white peach fruit richness with genuine body before the no-malolactic decision's most directly palate-apparent quality asserts itself: the tension and liveliness of preserved natural malic acidity, giving the palate a structure and focus that softer, malolactic-completed rosés cannot provide. The result is an "airy" quality — the wine feeling both rich and light simultaneously, the velvety texture and the mineral freshness occupying the palate together without contradiction. The pleasant minerality that the official tasting notes specifically identify as the cuvée's most enduring palate quality becomes most apparent at the mid-palate and into the finish.
Finish
