Moillard's roots in Burgundy reach back before the French Revolution — historic documents from Nuits-Saint-Georges confirm the family already owned vineyards at that time — but the house's real transformation into a serious trading operation began in 1850, when Symphorien Moillard purchased wines to fulfill an order too large for his own estate to supply on its own, effectively launching Moillard as a négociant house. That business has since grown into one of Burgundy's top five wineries, now operating as Moillard-Grivot, with meticulous winemaking and aging practices applied across a portfolio spanning both the Côte de Nuits and Côte de Beaune, as well as further south into the Mâconnais, where this Pouilly-Fuissé is sourced.
"Sous la Grotte" — literally "under the grotto" — draws its 100% Chardonnay fruit from limestone-clay soils, entirely hand-harvested, with the finished wine given an unusually extended and genuinely notable aging regimen: 8 to 16 months resting sur lie, on the fine lees, before bottling. That kind of patient lees contact builds real textural richness and complexity well beyond what a simpler, quicker Mâconnais white typically delivers. The 2022 vintage earned a Bronze Medal at the International Wine Challenge, a genuine, independently judged confirmation of quality.
The wine pours a golden yellow with emerald reflections, opening with a complex, genuinely luxurious aroma of white stone fruits, nuts, minerals, and vanilla — with time in the glass, siliceous and herbal accents emerge alongside flint, lemon, and grapefruit, developing further complexity through notes of roasted peanut. The palate is full-bodied, creamy, and rounded, carrying fruity and mineral nuances against lively acidity, closing on spicy, floral nuances in a genuinely long aftertaste. This is classic, well-made Pouilly-Fuissé — rich enough to stand up to serious food, with the extended lees aging giving it real textural depth for the price point.
