“Mollydooker” is Australian slang for a left-handed boxer, and Miss Molly is The Boxer’s girlfriend: “bubbly and full of fun.” The wine matches the character. It’s a sparkling Shiraz, an Australian specialty: a full-bodied red wine with bubbles, served well chilled, and a very different drink from Champagne or Prosecco.
The 2025 is 100% Shiraz from vineyards in McLaren Vale and Langhorne Creek. It begins as a red wine, barrel-fermented and matured in 100% American oak (40% new, 60% one-year-old), and then, to create the bubbles, the winery re-ferments its Boxer Shiraz. The result has about 14% alcohol and 9.8 g/L of residual sugar, so it’s off-dry, with a sweet-fruited richness.
The winery’s tasting notes: “The 2025 Miss Molly Sparkling Shiraz inspires fun and enjoyment from the first sip, the mouthfeel a symphony of bright delicate bubbles. Cherry and fresh plum dance delicately with cocoa and liquorice on the palate. Fragrant oak adds layers of complexity and a hint of vanilla to this generous spectrum of flavours creating a Shiraz that is full of sparkle!” Another set of notes calls it “vivacious and opulent, rich flavours of maraschino cherry and fresh plum” that “unfold across layers of chocolate and mocha,” with “hints of cinnamon and vanilla cream” adding “warmth and richness, while fine bubbles bring vibrancy and lift to the palate,” and calls it “lively and indulgent, Shiraz made for celebration.” A merchant describes “deep ruby in the glass with a foamy purple bead,” a nose of “maraschino cherry, fresh plum and blackcurrant, rolling into chocolate, mocha and a little liquorice and spice,” and a palate that is “full bodied, velvety and sweet-fruited, with lively bubbles.”
It’s made for salty, smoky, charry food: barbecued ribs, glazed ham, burgers and sausages, duck liver pâté, and roasted fig and goat cheese on toast. The touch of sweetness also suits dark chocolate desserts, brownies, flourless chocolate cake, and pavlova with berries. It’s a fun holiday and party wine, particularly for customers who like Australian Shiraz or who want something different from white sparkling wines. No professional scores are published, but it’s a cult favorite with its own following.
