Graciosa takes its name from the historic road of the same name — a scenic route that winds through Brazil's Atlantic Rainforest on its way from the mountains down to the ocean, and Novo Fogo's own copy calls this cachaça "a reflection of our love for the rainforest" itself. Novo Fogo distills entirely at a zero-waste facility deep in the coastal Floresta Atlântica, backed by Marumbi Mountain, using fresh-pressed, certified organic estate sugarcane — genuinely distinct from the molasses base most rum relies on, closer in spirit to Rhum Agricole, and prized for a naturally vegetal, grassy, terroir-driven character the brand credits directly to its clean rainforest and coastal environment.

What makes Graciosa genuinely unusual within the entire spirits world is its second cask: after aging two years in repurposed oak, the cachaça finishes an additional eighteen months in barrels made from castanheira do Pará — Brazil nut wood, sourced from one of the oldest and largest trees in the rainforest, capable of growing past three feet in diameter and living 500 years or more. Fermentation runs a full 18 hours using entirely wild yeast, and distillation takes place in a copper pot still, all carried out in tiny 130-liter batches processed by hand, with no chemicals used anywhere in growing the cane.

Kara Newman's blind tasting for Wine Enthusiast found the cachaça "an incredibly complex sipper" that "entices with aromas of vanilla, honey and ripe banana," those same notes "echoed on the palate, layered with surprising dried cherry and dusty cocoa notes, which linger into the long, gently spiced finish," recommending it "as a good option for an Old Fashioned variation." Novo Fogo's own tasting notes describe a "vibrantly aromatic yet creamy disposition," opening with "pecan and orchids on the nose," the palate morphing "into cherry custard," and finishing "with pleasant notes of soft clove and anise." The cachaça ages two years in repurposed oak barrels, then finishes an additional 18 months in barrels made from castanheira do Pará (Brazil nut wood) — one of the oldest and largest tree species in the rainforest. Bottled at 42% ABV / 84 proof, 750ml.
