Novo Fogo built Silver Cachaça around a genuine point of pride: "this silver cachaça proves that terroir matters." Distilled from fresh-pressed, certified organic sugarcane grown at a zero-waste distillery within a UNESCO-protected rainforest in Brazil's coastal mountains, the spirit picks up a genuinely distinctive character directly from its environment — sea breeze off the Atlantic imparting a subtle, real salinity that shows through clearly in the glass. Production leans on gravity-fed fermentation and distillation systems, letting the natural terrain of the coastal rainforest power much of the process, distilled in a custom-designed copper pot still rather than the industrial column stills most cachaça relies on.
Rather than bottling immediately after distillation — the more typical approach for unaged, silver-style cachaça — Novo Fogo rests this expression a full year in chemically inert stainless steel tanks, mellowing the spirit's edges without altering its flavor. It's also worth knowing: this is genuinely handcrafted cachaça, made in copper alembic stills, rested rather than bottled straight off the still, and certified organic — three points of distinction Spirits Review notes set it apart from "the usual type cachaça that you find imported to the United States."
Difford's Guide's independent tasting found it "comparatively subdued," with "fresh sugar cane juice" joined by "faint floral scents, tropical fruit, green bamboo," the taste "clean with dry sugary flavours and sweet red pepper with faint salt and white pepper," concluding the cachaça is "more subtle and refined than many other cachaças," characterized by "delicate sweet red pepper flavours and a light salinity." The Fat Rum Pirate's tasting found it "quite zesty and pretty pungent," with "grassy and milky aromas" carried "by a very clean citrus punch," calling it "surprisingly floral" with "quite 'mineral' like note" as a sipper, alongside "spicy notes of ginger and cardamom," concluding "I can't immediately think of any white cachaça that I would rate above this in terms of quality, price and availability." Spirits Review's own tasting found it "very smooth and complex," with "oak, pepper, savory mineral notes intermixed with citrus, lemon grass, traces of bergamot and salty overtones," comparing it to "an outstanding highland Tequila only more complex." This is genuinely refined, terroir-driven cachaça — real rainforest character in an unaged spirit most drinkers assume can't carry this much complexity.

"Grassy and milky aromas jump out at you but they are carried by a very clean citrus punch which adds a nice balance and extra layer to the nose. As a sipper, it is surprisingly floral and has quite 'mineral' like note. It actually has a really nice layer of complexity. Spicy notes of ginger and cardamon. I can't immediately think of any white cachaça that I would rate above this in terms of quality, price and availability."
