PRODUCT DESCRIPTION

Penelope Bourbon built its identity on blending. The Four Grain expression that put the brand on the map was, from the beginning, a study in how multiple mash bills could be combined into something more complete than any single recipe could produce on its own. The Barrel Strength line took that same blending philosophy and removed the water — uncut, non-chill filtered, bourbon in its purest form. And now, for 2026, Penelope has evolved the Barrel Strength program again: where prior batches blended three bourbon mash bills, Barrel Strength 7-Year blends four, each one aged a full seven years in hand-selected new American oak barrels.

Founder and Master Blender Danny Polise put it directly: "With four different 7-year straight bourbon mash bills coming together into something layered, mature and easy to get behind, it feels like the natural evolution of our Barrel Strength profile." The mash bill breakdown — 70% corn, 23% rye, 5% malted barley, 2% malted rye — gives this expression a rye-forward backbone relative to the standard Four Grain lineup, while the seven-year age statement across all four component whiskies adds a maturity that prior Barrel Strength batches, often released without an age statement, didn't carry. Bottled at 115.2 proof (57.6% ABV), completely uncut and non-chill filtered. Penelope's own description: caramel syrup and subtle barrel char, pushing the boundaries of the Four Grain's balanced flavor profile to bold new heights.

Origins & Craftsmanship

Penelope Bourbon was founded by Mike Paladini and Danny Polise, whose blending-first approach to bourbon — sourcing whiskey from established distilleries and building proprietary mash bill combinations rather than distilling everything in-house from day one — has produced a portfolio that has won more than 40 awards across the spirits industry, including Double Gold at the 2025 San Francisco World Spirits Competition for both Toasted and Toasted Rye, Double Platinum for Wheated, and Platinum medals for the Peach Old Fashioned and Black Walnut Old Fashioned ready-to-pour cocktails at the 2025 ASCOT Awards. In 2023, MGP — one of the largest bulk whiskey producers and suppliers in the United States — acquired Penelope Bourbon for $105 million, a transaction that gave the brand direct access to MGP's extensive aged whiskey stocks while Danny Polise continued to oversee blending as Master Blender.

Barrel Strength 7-Year represents the next step in the Barrel Strength program's evolution. Earlier Barrel Strength batches were blended from three bourbon mash bills; this release blends four, each one a straight bourbon aged a full seven years in hand-selected new American oak barrels before blending. The mash bill is 70% corn, 23% rye, 5% malted barley, and 2% malted rye — a composition that leans more rye-forward than Penelope's signature Four Grain, contributing the spice backbone that the brand's "layered, mature" characterization of this release specifically references. The whiskey is bottled completely uncut and non-chill filtered — Penelope's standard practice for the Barrel Strength line, preserving the full natural oils and flavor compounds that filtration would otherwise strip — at 115.2 proof (57.6% ABV).

Critics Reviews

No published critic scores are available for Barrel Strength 7-Year specifically at this time given the release's recency. The following confirmed characterizations represent Penelope's own description of the release and the established critical standing of the Penelope Barrel Strength program more broadly:

Penelope official: "Penelope Barrel Strength is bourbon in its purest form. Completely uncut and non-chill-filtered, our barrel strength bourbon is just as delicious and even more powerful than our signature Four Grain blend. Each batch of our Barrel Strength is blended from four bourbon mash bills and aged in hand-selected new American oak barrels, imparting notes of caramel syrup and subtle barrel char and pushing the boundaries of our Four Grain's balanced flavor profile."

Danny Polise, Founder & Master Blender: "This one really captures what we love about blending. With four different 7-year straight bourbon mash bills coming together into something layered, mature and easy to get behind, it feels like the natural evolution of our Barrel Strength profile."

Drinkhacker (on a prior Barrel Strength batch, A-, confirming program quality): "Not a lot of complexity to explore, the bourbon running to some elements of butterscotch, a touch of toasted wood, and some milder fruity notes of banana and a lick of toasted marshmallow. At the same time, it's tough to put down — a rare overproof bourbon that's also an easy drinker. My favorite Penelope Barrel Strength Batch to date."

Tasting Profile

The following profile is built from Penelope's official Barrel Strength characterization, the confirmed mash bill, the seven-year age statement across all four blended components, and the established house style of the Penelope Barrel Strength program at comparable proof.

Nose Deep amber — seven years across four separately matured straight bourbon mash bills in new American oak producing a color of genuine richness. The nose opens with caramel syrup — Penelope's own most consistent descriptor for the Barrel Strength line, warm and generous rather than simply sweet. Subtle barrel char threads beneath, adding structure without dominating. The 23% rye component contributes a spice backbone that lifts the caramel into something more layered — baking spice and a touch of toasted wood, with the malted barley and malted rye additions rounding out the aromatic complexity that four distinct mash bills bring to a single blend.

Palate Layered and mature — Danny Polise's own characterization confirmed at the entry. Caramel syrup leads, full and rounded at 115.2 proof, with the rye-forward mash bill contributing genuine spice that builds through the mid-palate. Subtle barrel char adds dryness and structure. The seven-year age statement across all four components is most apparent here — a depth and integration that younger or non-age-stated Barrel Strength batches don't carry. "Easy to get behind" in Polise's words: powerful at full proof but genuinely approachable.

Finish Long and warm, with the caramel and barrel char carrying through to a spiced, slightly dry close. The four-mash-bill blend resolves into something more complete than any single component — Penelope's blending philosophy at its most direct expression, uncut and at full strength.

Serving & Occasion

Neat at room temperature — the caramel syrup and barrel char open generously at 115.2 proof without requiring water. A few drops opens the rye spice and toasted wood further for those who want to explore the full four-mash-bill complexity at a gentler intensity. Outstanding for an Old Fashioned, where the caramel syrup character and rye spice carry through ice dilution with complete authority.

Cocktail Suggestions

Barrel Strength 7-Year Old Fashioned 2 oz Penelope Barrel Strength 7-Year · 1 tsp Demerara syrup · 2 dashes Angostura bitters · expressed orange peel. Stirred over a large ice rock.
