Penelope's Cooper Series exists for exactly this kind of experiment: take a straight whiskey foundation and finish it in a barrel that has spent its prior life somewhere unexpected — somewhere that has nothing to do with bourbon at all. Riviera takes that idea to the south of France. The base is a blend of 8-Year American Light Whiskey and Straight Bourbon — itself an unusual combination, since American Light Whiskey is a specifically distinct legal category, distilled at higher proof and aged in used or uncharred oak, producing a lighter, more delicate spirit than bourbon's typical richness. That blend is then finished in rosé wine casks — barrels that previously held the pale, dry, floral pink wines of Provence and the broader rosé tradition.

Penelope's own description calls it "a sweet, floral seaside escape" — candied fruit and floral herbal notes, sweet vanilla, angel food cake, and strawberry, with rich leather, ripe berry, and a slight spice underneath. Bottled at 94 proof (47% ABV), non-chill filtered, by Penelope Bourbon Bottling Company in St. Louis. One detailed 2026 independent review found the whiskey needs real patience — at least 20 minutes of air, considerably more than most whiskeys require — before the initial "palate-shock" of eucalyptus settles and the floral, strawberry, honeysuckle, and vanilla character that the rosé casks impart comes fully into balance. Once it does, the reviewer found it genuinely well-balanced — a whiskey built specifically for slow summer evening sipping.
Riviera is part of Penelope Bourbon's Cooper Series — the program built specifically to showcase the art of cask finishing, where straight whiskey meets barrels sourced from every corner of the globe. Where Penelope's core lineup (Four Grain, Wheated, Barrel Strength, Toasted) and Estate Collection focus on traditional bourbon barrel programs, the Cooper Series releases — which have also included Tokaji and Valencia cask finishes — apply finishing barrels from wine and fortified wine traditions entirely outside the bourbon world.
Riviera's base is a blend of 8-Year American Light Whiskey and Straight Bourbon. American Light Whiskey is a legally distinct US whiskey category — distilled at a higher proof than straight whiskey and aged in used or uncharred new oak containers, producing a spirit that is inherently lighter, more delicate, and less oak-driven than bourbon. Blending an 8-Year American Light Whiskey component with Straight Bourbon gives Riviera a foundation that is gentler and more receptive to the finishing barrel's influence than a bourbon-only base would be. That blend is then finished in rosé wine casks — barrels previously used for rosé wine production, whose residual character imparts the "rosé-kissed finish" that Penelope specifically markets as unique to this release. It is light and fruity, yet the classic boldness of MGP's American Light Whiskey is featured prominently — so much so that I initially found it challenging to find any remnants of a bourbon component. As the session continued, the bourbon came out to see what was going on. The big secret is you must get past that palate shock. I don't believe 15 minutes is nearly enough for Riviera to breathe — it needs about 20, or perhaps even more. However, once you get there, you'll find Riviera to be well-balanced. It drank right at its stated proof.
Appearance: a very orange whiskey that produced a thick rim with husky, slow, crazed tears. Nose: floral notes — strawberries, boysenberries, honeysuckle, and flowers — with honeysuckle on the inhale through the lips. Palate: a dense, creamy mouthfeel, with a massive palate-shock of eucalyptus at first sip. With the second sip, a floral note along with mint and vanilla emerges at the front."
Nose A very orange whiskey — the rosé wine cask finish's most immediately visible contribution, a warm orange hue distinct from standard bourbon's amber. The nose requires patience: floral notes lead — strawberries, boysenberries, honeysuckle, and broader floral character — with honeysuckle carrying through most distinctly. Candied fruit and floral herbal notes round out Penelope's own characterization, with sweet vanilla and angel food cake adding a dessert-like sweetness underneath the fruit.
Palate A dense, creamy mouthfeel opens the palate — but the first impression is a genuine palate-shock of eucalyptus, the most surprising and most specifically rosé-cask-derived quality in the entire release, and the reason patience matters here more than with most whiskeys. With time and a second approach, floral notes return alongside mint and vanilla at the front. Strawberry and ripe berry develop further into the mid-palate, with rich leather and a slight spice providing structure and grounding the fruit-forward character — the bourbon component's contribution becoming apparent only after the American Light Whiskey's boldness and the eucalyptus shock have settled.
Finish Soft and rosé-kissed — Penelope's own description of the finish's defining quality. Ripe berry and slight spice linger, with the leather note providing a savory counterpoint to the sweeter floral and fruit elements that dominate the front of the experience.
