Prunier XO stands apart from many XO Cognacs in a genuinely distinctive way: rather than focusing narrowly on a single cru, Cellar Master Stéphane Burnez has selected the finest eaux-de-vie from all five recognized Cognac crus — Grande Champagne, Petite Champagne, Borderies, Fins Bois, and Bons Bois — to build a blend that offers a genuinely broad, comprehensive representation of the entire Cognac terroir in one bottle. Each component eau-de-vie is aged individually, somewhere between 15 and 30 years, in large 200 and 400-liter oak barrels, well beyond the minimum aging requirement for the XO classification, allowing genuine, well-developed rancio character to build over time.
That extended aging takes place in Prunier's own cellars in Gimeux, just a short ten-minute drive from Cognac city — cellars the house credits with offering genuinely ideal aging conditions, thanks to the natural humidity provided by an adjacent river. The result is a Cognac built around depth and complexity rather than overt sweetness, reflecting Prunier's traditional approach to production, which the house's own copy emphasizes prioritizes "refinement and authenticity" above all else.
La Cognathèque's official tasting notes describe the Cognac as "bright gold with bronze" in color, opening with "an intense, complex bouquet of fine rancio with hints of dried fruit, nutmeg, tobacco, wax, orange and liquorice," the palate "refined, complex and supple, balanced with the nose," closing with "superb length, combining a delicate rancio with present but fine tannins" — genuinely "a complex Cognac that gradually reveals its aromas as you taste." The Barrel Tap's tasting confirms similar character, describing "dried fruit, candied orange peel, spice, and subtle tobacco" on the nose, developing into "dark chocolate, toasted oak, hazelnut, and warm baking spice" on the palate, closing "long, elegant, and warming with lingering fruit, oak, and rancio." Prunier XO Cognac is produced by Maison Prunier, a family-owned Cognac house based in Gimeux, near Cognac city, France, under Cellar Master Stéphane Burnez. The blend brings together eaux-de-vie from all five recognized Cognac crus — Grande Champagne, Petite Champagne, Borderies, Fins Bois, and Bons Bois — each aged individually for 15 to 30 years in 200 and 400-liter oak barrels.
