Romano took over the family distillery that same year, at just 17 years old, from his father Serafino, and went on to become one of Italy's most celebrated grappaioli, working the same equipment his entire career on what's widely considered the last surviving open-fire alembic still in the country — the distillery itself now stands as a genuine living museum of traditional grappa production.
This Moscato expression is made from the marc of grapes grown specifically in the DOCG Moscato d'Asti wine-growing villages of Neive, Trezzo, and Treiso, processed locally to capture the character of the region's celebrated aromatic white grape. Produced in a single batch using Levi's genuine open-flame alembic still, the spirit matures six months in 225-liter barriques made from a variety of different woods before bottling — a comparatively gentle aging regime designed to preserve the Moscato's naturally delicate, fruit-forward character rather than layer on heavy oak influence.
