PRODUCT DESCRIPTION

Shibui's 18 Year Sherry Cask is a genuine rarity within the world of Japanese whisky — the brand's only bottling to come from Kumesen Distillery, built in 1952 on the southern tip of Okinawa, an island with more than 600 years of distilling heritage behind it. Rather than the malted barley base most whisky drinkers expect, this expression is distilled entirely from special Indica rice, fermented using Okinawan black koji, single-distilled once in a traditional Japanese stainless steel pot still — a genuinely distinctive production method that reflects Okinawa's own indigenous spirits tradition rather than Scotch-inspired convention.

The spirit then rests a full 18 years in manzanilla and fino sherry casks, both lighter, drier styles of sherry compared to the richer, sweeter Oloroso or Pedro Ximénez casks more commonly used in whisky maturation — a deliberate choice that shapes the whisky's genuinely distinctive, citrus-tinged character. Shibui's own operating philosophy, "we don't distill — we discover," reflects the brand's role as a careful bottler and blender working with a small network of Japanese distilleries, remaining unusually transparent about sourcing and production in a category often defined by secrecy.

Whisky Advocate awarded a genuine 89 Points, describing "more oakiness on the nose, with milk chocolate, dried cranberry, slightly bitter cherry notes, hints of toffee, and muted wood spices," developing into "citrus freshness, vanilla fudge, gingersnap spiciness, licorice, walnut, and fresh fig," with a finish of "lime and green melon" that the reviewer notes "imply the influence of the lighter-style sherries." This exact expression also earned 91 Points at the Ultimate Spirits Challenge. Old Town Tequila's tasting confirms "delicate notes of chocolate covered red cherries, Madagascan vanilla bean and black licorice," met on the finish "with soft, sweet oak notes" and "a nuttiness" that "lingers perfectly on the palate." Elma Wine & Liquor's tasting describes a "honey amber" color "with a red tint," the aroma carrying "deep, earthy aromas and a hint of cardamom," developing into "baking spices, citrus zest, and tropical fruits," alongside "linseed oil, polished leather, and toasted sweetness." This is genuinely distinctive, rice-based Japanese whisky — a real showcase of Okinawa's own spirits tradition, aged patiently into something unlike anything Scotland or the Japanese mainland produces.

Origins & Craftsmanship

Shibui Single Grain Sherry Cask 18 Year Old Japanese Whisky is produced at Kumesen Distillery, built in 1952 on the southern tip of Okinawa, Japan — Shibui's only bottling sourced from this particular distillery. The whisky is distilled from special Indica rice, using Okinawan black koji, single-distilled once in a traditional Japanese stainless steel pot still.

The spirit matures a full 18 years in manzanilla and fino sherry casks — lighter, drier styles than the Oloroso or Pedro Ximénez casks more commonly used in whisky maturation elsewhere. Shibui operates as a bottler and blender, working with a small, genuinely transparent network of Japanese distilleries under its guiding philosophy: "we don't distill — we discover." Bottled at 40% ABV / 80 proof, 750ml.

Citrus freshness, vanilla fudge, gingersnap spiciness, licorice, walnut, and fresh fig, with a finish of lime and green melon, imply the influence of the lighter-style sherries."
