Tequila runs in Felipe Camarena's blood in a way that few families in Jalisco can claim. His grandfather created Tequila Tapatío and Tesoro de Don Felipe. His brother makes the celebrated Ocho brand. His cousin founded Camarena Tequila. Felipe himself is a third-generation master distiller working out of Destileria El Pandillo, near Jesús María in the Jalisco Highlands — and when he set out to build Terralta, introduced in 2011, he made a single, deliberate change to the family formula that ended up transforming everything: the water.
Most of El Pandillo's production draws on a blend of sources, including rainwater. For Terralta, Felipe uses only deep well water pulled from roughly 150 meters underground — a genuinely singular sourcing decision that, by his own account, is "the only thing he modified" and yet "makes it a totally different tequila." That deep-earth water carries a mineral signature unlike anything surface water or rainwater can offer, and it shows directly in the glass: a rich, mineral-driven, distinctly earthy character that has made Terralta a favorite among serious tequila collectors specifically for how different it tastes from everything else on the shelf. The 100% Blue Weber agave used is grown in the Highlands around Jesús María for eight to ten years before harvest, trimmed, then slow-cooked and steamed in a custom stone oven fitted with steam jets positioned at both top and bottom to ensure even cooking throughout. The cooked agave is crushed using a traditional stone tahona wheel, extracting the purest juice while preserving the fibers that, left intact, prevent unwanted bitterness. Fermentation happens in stainless steel using the same natural yeast strain Felipe's own grandfather relied on eighty years ago, before double distillation in custom copper stills, meticulously cleaned with distilled water and steam ahead of every new batch.
The Gold Medal at the 2021 San Francisco World Spirits Competition confirmed what devoted tasters had already discovered. One longtime reviewer, blind-tasting Terralta directly against G4 and Pasote — two of the Jalisco Highlands' most respected names — picked Terralta for top aromas and taste. Aromas of cooked agave, wet stone, and light pepper lead the nose, with slate, earth, subtle pepper, and a crisp citrus finish on the palate — an exceptionally balanced, easy-sipping tequila at 80 proof that CaskCartel calls "an excellent blanco" great for cocktails but "more than suitable for sipping neat." Verified additive-free by Tequila Matchmaker, bottled without any aging whatsoever to preserve the full, unfiltered character of the agave and that singular deep-well water. This is, quite simply, a genuinely different blanco — from a family that has been defining what great tequila can be for generations.
Terralta Blanco Tequila was introduced in 2011, crafted by third-generation master distiller Felipe Camarena at Destileria El Pandillo (NOM 1579), located in Jesús María, in the Jalisco Highlands of Mexico — the same facility responsible for the celebrated G4 and Selección 1579 brands. Tequila is genuinely a family inheritance for Felipe: his grandfather founded Tequila Tapatío and Tesoro de Don Felipe, his brother produces the Ocho brand, and his cousin founded Camarena Tequila — a lineage that runs through virtually every corner of the modern premium tequila category.
Terralta is made from 100% Blue Weber agave, grown in the Highlands around Jesús María for eight to ten years before reaching peak maturity for harvest. The defining production choice — and the single factor Felipe changed relative to his other expressions — is the water: Terralta uses exclusively deep well water sourced from approximately 150 meters (roughly 400 feet) underground, contributing a distinctly rich, mineral-driven character that El Pandillo's other products, built on rainwater and shallower sources, don't share. Harvested piñas are trimmed and slow-cooked in a custom stone oven equipped with steam jets at both top and bottom, ensuring even cooking throughout. The cooked agave is crushed using a traditional stone tahona wheel to extract pure juice while preserving fiber integrity, preventing the bitterness that more aggressive extraction methods can introduce. Fermentation takes place in stainless steel vats using the same natural yeast strain the Camarena family has employed for roughly eighty years, followed by double distillation in custom copper pot stills, cleaned with distilled water and steam before every new batch. The finished spirit is bottled without any aging, verified additive-free by Tequila Matchmaker, at 40% ABV / 80 proof.

Nose
Cooked agave and fresh steamed agave lead, joined by wet stone and light pepper — the deep well water's distinctive mineral signature most directly apparent here. Citrus zest and vanilla add brightness, alongside earthy minerals, vegetable notes, and hints of green jalapeño. Anise, orange peel, and soft cinnamon round out a genuinely complex and layered aromatic profile.
Palate
Slate, earth, and subtle pepper carry the entry, accompanied by sweet cooked agave. Caramel and vanilla build toward a peak of agave sweetness, softened by hints of butter and a subtle, earthy mushroom undertone. Citrus and lime add lift, with mint and tarragon emerging on the back of the palate alongside black pepper and cinnamon heat.
Finish
Crisp and clean, with a lingering agave sweetness and a lasting, well-oiled mouthfeel that carries through to the next sip. Citrus, caramel, mint, and mineral notes close things out — refreshing and genuinely distinctive.
