The Whistler is the independently bottled arm of Boann Distillery, in County Meath, Ireland — owned and operated by the Cooney family, led by drinks industry veteran Pat Cooney, who sold the drinks distribution company Gleeson's for €58 million before entering the Irish whiskey world himself, alongside his three sons and two daughters. The family built a state-of-the-art distillery just outside Drogheda, in a former Toyota dealership, and The Whistler range remains the brand's playful, cask-experimentation showcase — "whistled into life one fabled New Year's Eve," according to the company's own marketing.

P.X. I Love You takes a sourced single malt, initially matured in ex-bourbon casks, and finishes it for a minimum of nine months in ex-solera Pedro Ximénez sherry casks — genuine PX solera wood, meaning the casks come from a traditional pyramid aging system used to make Sherry itself, continuously refreshed with younger wine over decades. That extended sherry contact brings genuinely serious dark fruit and dessert-like richness to what starts as a comparatively young single malt.

Wine Enthusiast's Kara Newman awarded a remarkable 94 Points, calling it "a bold, distinctly sweet sipper," noting that "as the name suggests, this is five-year-old single malt finished an additional year in PX Sherry casks, and that year has added plenty of sticky-sweet raisin characters," with "each robust sip" opening "with maple, toffee and toasted grains, trailing off into salted caramel, cocoa and raisin, brightened by grapefruit," recommending it "as a dessert pairing." The sweetness is less pronounced in the mouth than it was in the nose, which I was relieved to discover."
