Thomas S. Moore is a Kentucky straight bourbon brand from Barton 1792, the Bardstown distillery where Moore began making whiskey in 1889. The Extended Cask Finish series is the brand’s way of exploring what other barrels can do to bourbon: each release is aged for 5 to 6 years in new charred oak, and then moved to another type of cask for an additional 1 to 4 years of maturation, in this case, Oloroso sherry casks. That long second maturation is more than a quick finish, and it gives the bourbon a thorough sherry influence while keeping Kentucky’s oak and caramel at the center. It’s bottled at 98.7 proof (49.35% ABV).
