Wild Common's team looked at that convention and made a deliberate, collective decision to break from it — not dramatically, but meaningfully. Rather than adding the standard amount of water, they chose to add slightly less, landing the finished Blanco at 42% ABV instead of 40%, and they skip chill filtration entirely. The reasoning is straightforward: those two small choices, taken together, preserve noticeably more of the tequila's natural aroma and flavor than the industry-standard approach would allow.
That philosophy runs through everything Wild Common does, and it starts at the source: the Cascahuin Distillery in El Arenal, Jalisco (NOM 1123), founded in 1904 and still run today by the Rosales family — Master Distiller Salvador Rosales Trejo, known to friends and family as "Chava," working alongside his father Salvador Rosales Torres and his brothers Salvador and Benjamin. The agave itself is grown in the red volcanic soil of the Jalisco Valley region, harvested and roasted for a full 72 hours in small 12-to-16-ton brick ovens, then extracted using a traditional stone tahona wheel in combination with a modern roller mill — a dual approach that balances rustic, terroir-driven texture with technical clarity. Fermentation happens naturally, with agave fibers left in the mix to build additional complexity, before double distillation in small stainless and copper pot stills. Nose
