Orlin Sorensen and Brett Carlile founded Woodinville Whiskey Co. in 2010 with a genuinely unusual level of patience for a new American craft distillery. Instead of chasing quick releases with small barrels or sourced whiskey while their own stock matured, they built their entire program on standard 53-gallon American barrels, eschewed sourcing altogether, and simply waited — years — for real, honestly aged whiskey to come out the other end. The late David Pickerell, one of the whiskey industry's most respected master distillers, guided the company in its early years, and by the time Moët Hennessy acquired Woodinville in 2017, the distillery had already built a reputation as one of the most serious, quietly ambitious craft operations in the country. The whiskey itself makes an unusual cross-state journey: grains grown exclusively for Woodinville on the Omlin family farm in Quincy, Washington are mashed and distilled 170 miles away at the Woodinville distillery near Seattle, then trucked back over the Cascade Mountains to age in Woodinville's own private barrel houses in Quincy's dramatically different climate.
That climate is the whole point. Central Washington's extreme temperature swings — hot, dry summers and genuinely cold winters — drive the whiskey deep into the wood and back out again with a rhythm that Kentucky's more moderate seasons simply can't replicate. Woodinville seasons its barrel staves in the open air for a full 18 months before coopering, specifically to soften the wood's harsher tannins, then deeply toasts and heavily chars the finished barrels to draw out maximum flavor. In 2026, the distillery's four flagship expressions — Straight Bourbon, Straight 100% Rye, Port Finish Bourbon, and Applewood Finish Bourbon — all received a genuine 6-year age statement for the first time, alongside a striking bottle redesign built from two distinct glass textures: a clear, refined upper half representing the purity of Woodinville itself, and a rugged, textured lower half representing the dramatic Quincy climate where the whiskey actually matures.
Bourbon Guy, revisiting the whiskey after the redesign, called it "still really tasty," with "a lovely, viscous mouthfeel" and honey notes carrying nicely alongside almond and cherry — enough to maintain his "Like" rating from years prior. Breaking Bourbon found "mild flavors of oak and rye spice along with faint caramel," with corn syrup and a whisper of white nectarine adding sweetness before a burst of rye spice and chewy oak carries the finish. The Whiskey Reviewer described "musty hay and pine needles tied to vanilla-sweetened nougat and cherry syrup" on the nose, developing into candy corn, vanilla, and a peppermint-cinnamon edge on the palate. Woodinville Whiskey Co. was founded in 2010 by Orlin Sorensen and Brett Carlile in Woodinville, Washington, guided in its early years by the late master distiller David Pickerell. The Straight Bourbon is built from a mash bill of 72% corn, 22% rye, and 6% malted barley, using grains cultivated exclusively for Woodinville on the Omlin family farm in Quincy, Washington. The grain is mashed and distilled at the Woodinville distillery, then trucked roughly 170 miles east over the Cascade Mountains to age in the company's private barrel houses in Quincy — a region whose extreme, dry temperature cycles promote significantly more active extraction of flavor from the oak than Woodinville's own milder western Washington climate would allow. Before coopering, the barrel wood is seasoned in open air for a full 18 months, softening its harsher tannins, and the finished barrels are deeply toasted and heavily charred to maximize flavor development. "The pour into my Glencairn took on a light amber look. The nose had a strong current of musty hay and pine needles, tied to vanilla-sweetened nougat and a dose of cherry syrup. Those field/wood elements from the nose evolved into a light dose of nuttiness on the palate, while the sweeter elements lost their earthiness, going to candy corn and vanilla, all this while picking up a peppermint and cinnamon spicy edge. On the finish, the whole profile rolls over into an evergreen note, fading to seasoned oak."

"Initially a bit hoary with notes of rustic saddle leather and hemp rope, this is one of Woodinville's punchier whiskeys, heavy on the nose with charry BBQ burnt ends and lightly sweetened by cherry pits and menthol. Quite smoky, there's a thick vein of tobacco both dried and smoldering. On the palate, layers of vanilla and caramel help soften some of the smoky-woody attack, slowly meandering its way toward ground cinnamon and cocoa powder... a coffee element emerges in due time, with hazelnut lingering on the finish, alongside just a touch of fruit."

Nose
