400 Conejos Espadín Cuishe Mezcal is a balanced, expressive mezcal that combines the sweetness and vibrancy of Espadín with the floral, earthy, and subtly smoky complexity of Cuishe agave. Smooth yet multidimensional, it offers a compelling introduction to agave spirits that is both approachable and layered — ideal for sipping neat or elevating mezcal-forward cocktails.
This mezcal is produced in Oaxaca, Mexico, the heartland of artisanal mezcal production, where generations of mezcaleros have perfected traditional methods. The expression marries two agave types:
Espadín, prized for its balanced sweetness and high inulin content, which yields depth and smoothness
Cuishe, a wild variety known for earthy, savory, and herbal complexity that adds structure and nuance to the spirit
The agave hearts are roasted in underground pits, fermented using natural yeasts, and distilled — often twice — in copper or clay stills. This artisanal approach preserves the character of the agave while imparting signature smokiness and terroir influence.
The name “Cuishe” references the taller, lance-shaped agave plants native to Oaxaca, whose distinctive biochemical profile contributes unique aromatic and flavor elements not typically found in pure Espadín mezcals.
This release has not been formally reviewed by major spirits or wine publications.
