Origins & Craftsmanship

Casa Centinela — Tequila Centinela, S.A. de C.V., NOM 1140 — was established in Arandas, Jalisco in the late 1800s, making it one of the oldest continuously operating distilleries in the Los Altos Highland region. The distillery was built by visionary founder Don José de Jesús Hernández, whose dedication to quality earned the respect of the regional tequila community and established Centinela as one of the Highlands' most respected producers. The business passed to his son Pepe Jr. Hernández and daughters Sandra and Grace Hernández — the second generation's continued stewardship maintaining the founding philosophy of quality without compromise.

The Los Altos Highlands of Jalisco — the high-altitude agave growing zone centered on Arandas and Tepatitlán — is the source of the Blue Weber agave that defines Cabrito's character. Highland agave, grown in the iron-rich red clay soils at 6,000 to 8,000 feet of altitude, develops a distinctly different flavor profile from Lowland valley agave: brighter, more citrus-forward, more floral, and with a characteristic pepper spice in the finish that is the region's most specific terroir contribution. The altitude and climate force slower agave maturation, producing piñas of greater sugar concentration and aromatic complexity than faster-growing Lowland agave approaches.

The production process is traditional throughout. Blue Weber agave piñas are slow-cooked in traditional stone ovens — the masonry oven method that develops the full, rounded sweetness of cooked agave without the bitterness of autoclave pressure-cooking. The cooked piñas are processed using a roller mill that shreds the fibers and extracts the fermentable juice, which is then double distilled before resting in old American oak barrels.
