Old Man Winter is produced by Preservation Distillery + Farm in Bardstown, Kentucky, and is marketed under the evocative moniker “Bourbon from the Black Hills”, a nod to frontier allure rather than the geographic source of the spirit. The liquid itself is a blend of Kentucky and Indiana bourbons, including pot-still-style bourbon from Preservation and high-corn sourced stocks, all brought together and bottled at cask strength, which means no dilution after barreling.
While the current release carries no age statement, past and rumored blends suggest components aged roughly 7–11 years before bottling—imparting structural balance alongside deep oak and fruit influence.
This practice — blending wheated and high-corn bourbons and finishing at higher proof — is designed to produce a bourbon that feels both big and expressive without being overly harsh, preserving aromatic richness from mash bill diversity and extended barrel interaction.
